I don’t take the seeds out though. Instead, I shread the cucumber then squeeze the juice out. I also don’t add sugar or salt and for the acid I use red wine vinegar instead of lemon juice. I guess they are actually quite different now that I type it out. lol I’m sure their way is great too. So happy to hear they mentioned you in their book Suzie. You deserve it my friend! HUGS

I just got a copy of the new book last week and there you are in print, what an absolute honour.

I just love this book, it’s quite the overhaul from the original Looneyspoons (which I still have, loose, stained pages and all). I know I will love this one just as much. I can’t stop marking all the things I want to try. The Tzatziki looks amazing…mmmmmm.
