Thanks to the latest issue of Ricardo I came up with a tasty turkey burger recipe that is complex in flavour but super easy to make! And it was my first turkey burger-making experience.
Unfortunately, the original recipe is not online. I replaced the lemongrass with lemon zest and omitted the Sriracha because Reg is not a huge fan. Feel free to play with the recipe as you see fit!
The Recipe
You will need 1 lb of ground turkey, 3 tbsp chopped cilantro, 1 lemon (zest and juice), 2 tsp fish sauce, 2 tsp soy sauce, 2 tsp brown sugar, 2 finely chopped cloves of garlic, 1 chopped green onion, 1/4 cup mayonnaise and 4 hamburger buns.
Mix together everything but the mayo and buns (of course) in a large mixing bowl.
I used thawed frozen ground turkey and it was WAY too moist so I added some panko breadcrumbs to absorb some of the moisture.
Shape into four patties, brush with oil and put in the fridge for 15 minutes to help the burgers set.
I was worried about them falling apart so instead of grilling them I fried them in a cast iron pan over medium high heat with some canola oil. Cook 4 minutes per side until cooked through.
While the burgers were cooking I added the juice of a lemon to 1/4 cup of mayo for the sauce. If you want it spicy though, add Sriracha instead.
Toast the buns, top with the burgers and slather with the sauce.

Damn! I could not believe it. I really thought turkey burgers were going to be boring but these are super tasty and quite delicious.
I had a patty leftover so for lunch I decided to make one of the burgers but WITH Sriracha and mayo for the sauce.
I slathered it on and look at that colour! Beautiful. But… Could I handle it?

This spice wimp must be getting tougher because I handled it just fine and again, damn! Delicious! Tangy, complex and absolutely NOT boring… I had no idea turkey burgers could be interesting, LOL. I really didn’t. I was quite resistant to making them but when I saw that recipe in Ricardo it looked so interesting I had to try it.
So glad I did! We both loved them and I honestly can not believe how healthy and delicious they are at the same time.
