I ended up using pork neck bones for the bones along with a chicken quarter. I didn’t have nearly as much fat as your did. Maybe neck bones went as good? I took some fresh shiitake and sauteed then and added them with the final ingredients when assembling the soup. Charred corn, bamboo, chicken from the stock, marinated egg, and chili oil. So good!
