Barbecue Chicken in a Crockpot

Crockpot Barbecue Chicken

I finally found something I like to make in a crockpot: barbecue chicken. I don’t have a barbecue yet so I tried to make it in the crockpot instead so it was slow roasted and yummy. The meat was fantastic! Very moist and super tender. I oiled down the entire slow cooker and then put some celery sticks in the bottom to prevent the chicken from stewing it its own juices.

The night before I had put together a blend of spices (garlic powder, smoked paprika, onion powder and cumin) and slathered it all over the chicken and under the skin since I don’t eat the skin and wanted the meat to have the flavour too. I put the chicken in a large zip lock bag with the spice rub. Right before putting it in the crockpot I added the salt and pepper. You do not want to include salt in your spice rub, it will make the meat dry. Season right before it goes in the crockpot and drizzle with some oil. I couldn’t believe I got it in my tiny slow cooker but I did!

I had it on low for five hours and then turned up the heat to high for the last two, just to be safe. After this point I brushed on some barbecue sauce but by then I had no light in my kitchen to take a photograph with!

I made a whole barbecue chicken that cooked all day without heating up my kitchen. I also saved $4, the raw chicken was only $6 and roasted chickens are $10.
All I had to do was season and cook the chicken on my counter for an entire day. No big deal!
Woohoo! Finally a slow cooker success! It’s about time.

    very exciting! I will definitely try this one in my slow cooker. I have always used it as a winter appliance, but like you said – what a great way to cook without heating your house. I might just pull that badboy out of the basement sooner now!

    Your chicken sounds really yummy. I didn’t know about not adding salt to a spice rub. I remember it for next time i season my meat.

    OMG! Putting the celery in the bottom is genius! One of the things I dislike about the crockpot is how soggy some things get because they sit in the juices all day. Will definitely have to try that trick out!

    Wow, it sounds wonderful. I will definitely have to save this recipe. I’ve been doing roast beef in mine the last couple of weekends and then using the beef for lunches during the week. It’s been great!

    With chicken though, it is still cheaper for us to buy it already cooked. We only eat free range and the bought chicken(in Aussie $) is 9.50 and the raw is 11.00!

    The celery idea is brilliant! I would have never thought of that. I’ll have to pull my crockpot out soon- I’d like to start using it more. That chicken looks really good…
