A long weekend on my own with a plethora of English muffins

English Muffin Weekend!

It is the long Victoria Day weekend here and I have completely filled it with food. Weekends can be very long and lonely here, even when the weather is fantastic. I turned my attention to creative foodie ideas and took full photographic advantage of rare sunlight streaming into my home.

English Muffins slathered with strawberry rhubarb jam went fantastic with my decaf Irish cream coffee. I bought these coffee beans to make homemade coffee ice cream this weekend but indulged a mug just for me. The ice cream custard is chilling in my fridge and will go churning through my ice cream maker today! Pretty typical combo, jam on English muffins. Of course I had to switch it up!

How about mini donair pizzas with a homemade puttanesca tomato sauce and melted cheddar? I made these instead of ordering a pizza as a weekend treat. Yum!

English Muffin Weekend!

I think this was my favourite. Black bean beef and broccoli slathered with melted cheddar. Delicious! This one was inspired by Beautiful Breads and Fabulous Fillings by Margaux Sky, I just added the beef from a leftover stir fry. I was going to make a Nova Scotia lobster roll with one but I am saving the lobster for a Fettuccine Alfredo recipe. Yum!!!!

It was fun coming up with new ideas to play with food. For me, food is my canvas and my muse. It gives me a subject for my camera and inspiration in my life. Without it, my life would be very, very dull indeed.

I seem to have traded the wild of British Columbia for foodie adventures in Nova Scotia. It has not been an easy transition and my heart is still in BC but I cope with homesickness by creating a fabulous world of food in my house on the other side of the country. It is my hope to have the best of both worlds some day soon. Until then, bring on the recipes!

    Suzie my heart goes out to you šŸ™ One fun way to use up the weekends in NS is to explore the beaches. When I’d get bored (which happened alot before I discovered cooking too), I’d pack up my daughter and go exploring. If you need tips on some great beaches send me an email & I’ll list you our favourites šŸ™‚
