Coffee Shortbread

When I was a teen my sister Jamie used to bake coffee shortbread cookies. I thought they were the best cookies in the whole wide world. I asked her for the recipe this year but it seems to have disappeared! Oh foodie tragedy. So I went on a search for a recipe that was similar enough to do for this holiday season and found this recipe. They are not as perfect as Jamie’s but they are pretty darn amazing!

Coffee Shortbread

What gives the cookies that coffee flavour in this recipe is the instant coffee but I only had instant espresso powder which you dissolve first in some water before adding it to the batter.

Oh my poor Rebel! Look at my mixer and what I have been putting her through! Anyway this is your typical egg-free cookie dough: butter, icing sugar and flour. Easy! What makes it special is the instant coffee.

With a mini scoop make walnut-sized cookies and then use the tines of your fork to compress the cookie. Add some sugar to the tops and bake.

These cookies were disappearing right after the first batch! Our mail carrier came and he passed me parcel after parcel in the mail and I finished saying this one is for you! I included these warm cookies on his plate of treats and he laughed and laughed. These are a little taste of my past (well, kind of) and I hope you give them a shot. This recipe actually makes a lot of cookies and tastes like Christmas with a dash of something special.

    Shortbread is SO GOOD!
    One of my friend dropped of a plate of sugar cookies for my co-worker – Gluten Free – & crisp!! She gave me one to try – (candycane) which was fun 🙂

    Thanks for sharing with us this beautiful recipe. This is one of my favorite recipes of all time as this is a combination of 2 of my most favorite food. Cookies and coffee I would definitely try this recipe and share this with my friends. Great post!

    These came out a bit too dry for me. The flavor was bland too even though I added 50% more coffee.

    Hey Debbie, shortbread cookies are supposed to be dry and subtle, even with the coffee so maybe you could try the Mocha Dreams next time. Definitely not dry and with the chocolate covered espresso beans you have strong coffee flavour!
