It all starts with falling down a Pinterest hole and ending up on the other side of a recipe that looks nothing like what you started with. I decided to go off the foodie map and come up with my own noodle dish recipe and I am so glad I did. Not sure this ramen is much healthier than what comes in those packets but promise it is tastier!
The Recipe

You are going to need instant noodles. I used 3 bunches of Rooster Brand noodles.
Sautee 1/2 an onion, 1 diced celery rib, 2 minced garlic cloves in 1 tbsp of hot olive oil in a large pot until softened. Then add 1 tsp of shrimp paste. If you do not have shrimp paste, just add a little more fish sauce.
Add 1/2 tbsp chill powder and…
…1/2 tbsp of lemon grass paste by Gourmet Garden. Then add 3 cups shrimp stock (or fish stock or even chicken if you want to make this a chicken ramen) plus 1 cup of water. Stir in 2 tbsp of tomato paste.
Add 1 tbsp of fish sauce and bring to a boil and simmer for 10 minutes.
I decided to cook the noodles in the broth so they would soak up those fabulous flavours.
Add some spinach for nutritional value and a squeeze of lime.
While the noodles are cooking sauté some well seasoned shrimp.
Foodie Results
It is a lot more work than just cooking a package of noodles but it is worth it. In fact just looking at this photo is making me want to make it again already. If you can do not have any Gourmet Garden lemon grass paste you could alway bang up some fresh lemon grass and put it in the broth as it is simmering. Just remember to remove it before you eat.
If you want to add some heat, go for it. I personally loved it just like this. Is there anything better than noodles? Yes! Shrimp and noodles…
