The idea of warm milk never warmed my heart (or my stomach for that matter) but when I saw Ricardo make his Soothing Almond Milk on The Food Network, I just had to try something like that! Milk with the flavour of nuts simmered into it? It seemed like a nutty tea and perfect for holiday experimenting in my kitchen. Of course I had to play with the recipe since I did not have almonds and I only needed enough for one serving.
For one serving you will need: 1 cup of milk, 1/4 cup of sliced hazelnuts, 2 tbsp of light cream, 2 tbsp of sugar, 1/2 of vanilla and 1 tbsp of Baileys.
Bring milk, nuts, cream and sugar to a boil and immediately reduce the heat to a simmer. Simmer for 10 minutes. Strain and add Baileys and vanilla, mix well and enjoy!
Relaxing indeed! I do not drink a lot of alcohol but Baileys helps warm me up through the winter and adding it to the nut milk is a beautiful thing. I think next time I will try it with some Frangelico to boost that hazelnut flavour but for now, Baileys will more than do.

I think you must have inadvertently reversed the measurements, Suzie — surely it should be one cup of Baileys and one tablespoon of milk? Mmmmmm.
