Sour Cream Vanilla Frosting Recipe

I feel like I kind of cheated when I made cupcakes from the PC Gluten-Free Golden Cake Mix to make my Halloween Sugar Glass Shards-O-Rama. I was determined to make my own frosting and I had lots of sour cream and thought that it might make a very tangy frosting.

The Recipe

I found this recipe on Allrecipes.com which was very basic but looked tasty. I made the mistake of not creaming the 4 tbsp softened butter, 1/2 cup sour cream, 1/2 tsp vanilla extract, 1/2 tsp lemon juice and 1/4 tsp salt first. My bad!

However, I did sieve my 2 3/4 cups icing sugar into the above ingredients (which should already have been creamed together).

The frosting was lumpy so I sieved the sugary gooey mess into a bowl which helped a little.

Yup, there were still lumps and bumps but the flavour? Fantastic! If you make this recipe I recommend you use full fat sour cream. I think the lemon juice might curdle and break a lower fat version.

It spread wonderfully on the cupcake and is super zippy in flavour.

It managed to work great for my Halloween Sugar Glass Shards-O-Rama and is a wonderful recipe that I will probably make again. Next time, properly! Even with my mistake though, pretty damn awesome.

I will never say no to adding more sour cream into my life. My mom would be proud.

    Homemade is the BEST. I’ve got dough rising now. Serving it with stew that I made yesterday because I knew that today, I’d be out couponing.
