I finally found some time and energy to bake recently and came up with my own recipe for these divine cookies! It makes a large batch and I promise you, these are way better if you do not over bake them in the oven. You want them soft and lovely, they are fantastic that way. I hope you try making them and if you do not like white chocolate or orange, try something different. Why not dark chocolate with rum?! Or add nuts. I bet pistachios would be amazing in these cookies! Baking is never boring. Make it YOUR way.
White Chocolate and Orange Kissed Cookies
1 cup light brown sugar, packed
1 cup granulated sugar
2 teaspoons pure vanilla extract
2 extra-large eggs at room temperature
3 cups flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 cup of white chocolate chips
Cream the butter and both sugars until light and fluffy in the bowl of an electric mixer fitted with the paddle attachment. Add the vanilla, orange blossom water or extract and zest. Then add the eggs, 1 at a time, and mix well. Sift together the flour, baking soda, and salt and add to the batter with the mixer on low speed until just combined. Fold in the white chocolate chips.
Drop the dough on a baking sheet lined with parchment paper, using a rounded tablespoon. Bake for 13-16 minutes (the cookies will seem underdone). Remove after the cookies have flattened out and just look golden on the bottom, not a deep brown. Remove from the oven and let cool slightly on the pan, then transfer to a wire rack to cool completely.
