The dough has risen!

Pizza never used to be a comfort food to me. It was just something to get when I did not have the energy to cook. It was filler food. My homesickness has been really bad lately and so I started craving our favourite pizza on Vancouver Island: Ali Baba‘s Phat Philly. Where else can you get a roast chicken pizza with green onions, mushrooms, ranch and barbecue sauce? If I can’t buy it on this coast, I can make it and have a taste of home!
Finding a good pizza dough recipe for the breadmaker was a bit of a challenge but I found one here. I add just over a tsp of sugar to get it a little more oomph! See how big it got? You can of course make the dough by hand but I have no energy lately so my breadmaker did all that work for me.

One quarter = one pizza

I cut that giant piece of dough into quarters and each quarter I rolled out:

To cook the dough I grilled it on my cheap cast iron grill:

Three minutes on each side. I added the toppings and broiled until the cheese melted:

There is my favourite Vancouver Island pizza! My husband and Mom both said that it may actually be better than the original which is super high praise. I have tried six different pizza places in the HRM and so far, none of them come close to any of my favourite BC pizzas. That’s OK, I can make better pizza than all of them.

    I <3 pizza! Unfortunately I have not been able to make a homemade pizza that I like. I’ve found a few pizza places that I really like, though.
