It is that time of year. Summer is coming and we are replacing hot beverages with cold ones. As a non-drinker I am always looking for refreshing drink ideas and my dear foodie friend Ava sent me this link for a copycat recipe of Tim Horton’s Iced Cappuccino to try. She had switched the recipe up herself and I did so in my own way too:
I made 2 oz of decaf espresso which I let cool. Once no longer hot I put the espresso in the blender with 2 tbsp of icing sugar, 4 ice cubs, 1 tbsp of Nescafe Ice Java (cappuccino syrup), 1/2 cup of skim milk and blended. Ava used chocolate syrup which I bet would be awesome! You could always use cold coffee instead of espresso.
The icing sugar makes the drink all nice and foamy. I love that I am saving a ton of calories and money making this at home. This weekend we picked up some Iced Caps on the way home from downtown and they were good but I think I agree with Ava, this recipe is even better and now I can entirely avoid drinking caffeine. YUM! I’m all about the iced tea, myself. My only new development to share? Keeping sliced lemons frozen in a ziplock bag in the freezer. Fresh and like an iced cube! Perfect.

So glad you enjoyed the recipe, I actually found the coffee syrup as well and am going to try it your way. Also, never thought to use the icing sugar…you are truly an evil genius in the kitchen. Well, the next time I make some, which I’m sure will be soon, I will raise my glass and toast Suzie the Foodie!!

I made my own coffee syrup and I freeze coffee in ice cube trays to make my copycat drink. 🙂 I do use the high-test version, but making it decaf would be easy.

@leel, That’s superb! I’m going to do that with both lemons and limes (limes are my preference). That’ll save me a boatload of wasted, forgotten-about fruit (which is a shame).

For those on a low carb diet here’s what I do:
I freeze coffee in ice cube trays then everyone can make it to their desired strength of coffee flavor. I personally use 4 coffee cubes, 4 ice cubes, 1 T sugar-free Torani chocolate syrup, 1 cup unsweetened chocolate almond milk and 1/4 whipping cream. I add the whipping cream last so it doesn’t curdle from too much blending in my Bullet.

Wow, there is such a thing as a sugar-free chocolate syrup? I have to find this. I use Almond Fresh’s Coconut/Almond Milk sometimes too although it won’t froth up like whipping cream, sweet. Well done!
