I have been buying these lovely bags of small potatoes from Kin Farm’s Market. They are the perfect size to cook up and use later for various delicious potato dishes. To keep life as simple as possible, I decided to try cooking them in my pressure cooker The Instant Pot for fast and easy results.
The Technique
Add 1 cup of water to the bottom of the pressure cooker and then add the rack. Top with steamer and then add your potatoes.
Set to steam for 15 minutes. I have seen people steam them for only 10 minutes but I had some big potatoes in there so to be safe, I steamed for 15 minutes.
Beautiful!
Perfectly steamed potatoes that are soft but not falling apart.
Foodie Ideas
You can enjoy them the Latvian way with salt, pepper, sour cream and chopped fresh dill. Delicious!
Fry them up chopped into wedges in a cast iron pan in butter with some seasoning and lot of freshly cracked black pepper.
These made the perfect home fries for brunch.
Let cool completely and make this fantastic potato salad that I heart deeply. So much so I might make some this week since summer is not over just quite yet.
I have always been wary of steaming potatoes. Crunchy potatoes are the worst! I knew if anything could properly steam potatoes all the way through it would be The Instant Pot. As a result, I have been enjoying all of these treats throughout the summer.
Thank you The Instant Pot!
