French Toast: It’s all about the bread

Apricot Bread French Toast Stuffed with Chocolate Hazelnut Spread

I followed my friend Steve’s suggestion, while he was on the show Breakfast Television, he recommended stuffing French toast with Nutella. Last weekend I stuffed my homemade apricot bread with this divine hazelnut chocolate concoction. Oh my god. It was unbelievably delicious! And it was not just because of the chocolate hazelnut spread went oozing everywhere. It was because I used homemade bread.

I have tried impressing my husband with French toast for a long time and I can tell, it is not his favourite. Yet when we would go out for brunch and he orders French toast at our local favourite brunch hang out Cora’s, he loves it. What the heck was I doing wrong?

Turns out, it’s all about the bread. Of course it is! Cora’s uses homemade cinnamon brioche bread and that is where the quality control lies. I was using store-bought whole wheat bread that had been in the freezer for a long time. Duh Suzie.

The best part (other than the fantastic flavour and texture) of using homemade bread is I can slice it as thick as I like which allows for stuffing it with just about anything: marscapone cheese, raspberry jam, chocolate chips…

My bread is low in fat too so I can feel just a teeny little bit less guilty that this French toast put me in a sugar coma for an entire Sunday morning.

On the weekends I love pulling out all the stops for breakfast. By making my food from scratch I know that I am not filling my plate up with preservatives and fat. Until I add the extras! But that is only allowed on the weekend.

    Oh man – this looks amazing really!! I only discovered Nutella in the last year or so. I LOVE it although I’ve eliminated it from my diet (too much sugar).

    Holy Macaroni that looks good! I love Nutella, so I’ll have to try that one! It’s actually the basis for one of our weekend treats – “instant” s’mores: graham crackers with nutella and a smear of marshmallow fluff. Not exactly healthy, but the kids love them. Okay, so do I!

    My Sunday brunch consists of sprouted whole grains bread, eggs over easy, crispy bacon, lightly sauteed spinach and Corrie Street! 🙂 Oh and Earl Grey tea of course 🙂

    Not very imaginative, but yummy!

    Hi Suzie — I found your new blog today and I’m so glad to read about your culinary adventures again! But now I’ve gained 5 pounds just from reading it from start to finish! Two comments about today’s post: (1) pastries in Europe often have nutella as a filling and yes it’s SO good, and (2) my special Sunday brunch treat is a strawberry waffle. Yum!
