February went out with a bang! I woke up yesterday hardly being able to move my head and then just from talking on the phone I somehow threw out my back. Making dinner like a slow-moving robot last night was not as cool as it sounds.
Doing a bit better today but have decided to take it easy today and share the latest Cooking School for Delinquents class where we made a quick and pantry-friendly mole sauce! You can find the original recipe here.

I want to thank Pop Shoppe Pop for sending me their ultra-cool t-shirt and wore it in the video as promised. I thought it went great with my giant Emo donut pendant!
As I said, this recipe is very pantry-friendly. The only thing that might be had to find at the ancho chilies I used. If you can not find them you can always use chipotles instead. I did end up adding lots of water and changing the recipe to make it work so make sure to also watch the video.
Here is the final sauce! It tasted even chocolatier the next day. Which actually worked! Not too sweet and very savoury.
Here is Reg trying to figure out how to express how he feels about the dish. You can see by the look on my face how worried and concerned I was, hoping he liked it. I was thoroughly impressed with it and will make it again.

There are no rules, no teachers at the Cooking School for Delinquents. I really just want to learn and have fun with food and almost inevitably end up changing the recipe as I follow my own lesson. You just never know what is going to happen. Heck, I don’t even know!

I threw my back out on Tuesday trying to open a stuck microwave door. It’s better now though. You’re right — the darndest things can cause injury!

I loved the video! You and your husband are the cutest couple : ) I have wanted to try and make mole – chocolate with dinner? YES! But was scared off by thinking it took hours to make the sauce and was quite a process. I think I can do this! Thank you
