Homemade Marinated Olives

Homemade Marinated Olives

I am mad about olives! Always have been, even as a young girl. What I don’t like are the marinated olives you buy at stores that are so hot and spicy I can’t eat them. That bites. So when I saw on some foodie shows that you could save money and make them yourself and make them the way you want, I just had to try making some for myself!

Homemade Marinated Olives

I asked for some help on Twitter and came across a few recipe recommendations and came up with this very simple flavouring combo: thyme, garlic, balsamic vinegar, sriracha hot sauce and olive oil. I used, believe it or not, Dollar Store olives! Yup, I wanted to take the cheapest olives you can possible buy and make them taste like a million bucks.

I added the thyme to the balsamic vinegar and grated in the garlic. Then I added a generous bit of hot sauce and drizzled in some olive oil. Which I regretted! I should have added the mixture to the olives first and then the oil. If you add oil first, sometimes flavour does not penetrate very well.

These olives ended up being very tasty! Next time I will add the oil last and more hot sauce. They were surprisingly mild but delicious.

They were fabulous on my sundried tomato pizza and in a Greek salad. I used the last of the marinade as a dressing for a pasta salad and it was fantastic. An easy and cheap approach to make ordinary food fabulous!

Happy weekend eating everyone one!

Oh I’m mad about olives too, as is everyone here. What a fantastic idea to take the plain ones and add your own zing to them! The possibilities are endless. They must have been just awesome on that goregeous pizza. Thanks for the always creative and informative foodie tip. And now after looking at that glass full of glistening little black beauties I’m totally craving some šŸ™‚
