Is there anything more delicious than fresh pasta? I personally adore it! So I tried a technique Jamie Oliver demonstrates in his cookbook Jamie’s Food Revolution. I bought some fresh lasagna sheets and using a pizza cutter, cut out my own noodles:
Challenging! They were not perfect, I did not use a ruler just did my best and he is right, there is a charming homemade feel to them even though I did not make the actual pasta myself.
I sauteed some garlic and grape tomatoes in a combination of butter and olive oil and boiled the pasta in salted boiling water for 2 1/2 minutes. Then with tongs I just lifted the pasta out of the water and put it directly into the saute pan and stirred the garlic and tomatoes into the pasta. I took the pan off the heat and then added some homemade pesto. Tyler’s pesto is excellent! For additional nutritional value I added some thawed frozen peas to the pesto which turned out great. You never want to cook your pesto! Make sure to add it to the noodles off the heat and if you do not want to make your own pesto, use a great jarred one. That’s it! You have a fantastic side dish in no time at all!
I served the pasta with a very easy chicken wrap. Get come cooked chicken and chop it up. Combine a little mayo with either curry powder or a little curry paste. Toss the chicken in the mayonnaise and you have curried chicken. Simple! Put it in a tortilla with some lovely greens, roll it up and slice in half.
Super fast and easy and delicious. The perfect meal!
