I realize that I might be starting to sound like an Instant Pot fanatic so I was not going to post about how much faster, easier and cooler in the kitchen it is to make cobs of corn in the pressure cooker quite just yet. Then I realized the long weekend is upon us and this would make so many people’s lives easier so I thought, what the hell?
Tutorial
Place the trivet on the bottom of the Instant Pot. Top with cleaned and prepped cobs of corn.
Add 1 cup of water to the Instant Pot.
Secure lid and steam for 3 minutes. OK, apparently you can do this in just 2 minutes but I did not believe it so I added another minute.
DONE!
Remove lid and there you will find beautiful golden perfectly cooked cobs of corn.
Adorn
I used to be a corn purist and not put anything on my corn but Reg has been a bad influence on me.
I was skeptical that steamed corn could taste better than boiled but when done in the pressure cooker the texture is perfect.
There is even more corn flavour and it is done so fast! It is ridiculous.
Reg also taught me that corn tastes even better with freshly ground black pepper on it. OMG, so delicious!

Your corn looks SOOOOO good…I can’t wait to have some fresh corn this summer!! Do you find that you use your Instant Pot a lot? Would it be a good investment you think?

Happy Canada Rain Frances! Thank you and yes, it was incredible. Yes, I used my Instant Pot at least once a day, it is so versatile in what it can do and saves on heat in the kitchen big time. Best for people who are meat eaters if you are going to get the most bang for your buck but in general, one of the best kitchen tools I have ever had.

OMG, you MUST have butter on your corn! SIMPLY MUST! But I use salt, not pepper — sorry, Reg. My Dad always preferred pepper on his corn too.

I know, people thought it was weird that I would skip the butter and yes, salt of course! I thought Reg was crazy but I have come to like corn with that peppery kick now but whatever floats your foodie boat!
