My fridge is finally full again and it has gotten warm and finally feels like summer. Which means I do not want to turn my oven on! As a result, I have been depending on summer classics like these floating mandarin oranges in orange Jello. Perfect for a cool day.
Eating Jello always takes me back to my childhood. The challenge of eating these cold neon sloppy contraptions is still fun for me even as an adult. Whatever I can do to keep cool in the kitchen and yet still have interesting food sounds good to me.
It is the time of year to make salads and the closest to a hot meal in my house these days is a panini! What foods keep you cool?
Oh and the trick to making fruit float in Jello is to make it as usual and then after about an hour to two hours in the fridge, once the Jello is starting to set, gently add the fruit. Yummy and fun!

My aunt in Germany used to make lime green jello that had what seemed like an equal amount of whipped cream folded into it. It was SO refreshing.
I find tuna or egg salad with lots of chopped celery and green onion great for this time of year. It’s especially good chilled prior to eating with bread, wraps, pitas or lettuce.

I’ve never added fruit to my jello. I’ve seen it before, but I didn’t think it was that easy. That’s so entertaining I think I’m going to have to make some!
We barbeque a lot at my house in the summer. At least a few times a week. I also eat a lot of sandwiches because they’re so simple and quick to make. Plus that means no oven being turned on. š

What a great post – brings me back to the 70’s. Jello was a staple in our house. (along with poptarts and rice krispie squares)!
I remember so well what a treat it was when my older brother would make jello and add a can of fruit cocktail….we thought it was the classiest dessert ever!!

I love Jello! These one looks beautiful. I liked going out as a child and getting to have jello squares, so much more special than scooping it out of a bowl with a spoon like we did at home.
