Once summer gets here, I want to find quick and easy ways to make dishes for lunch. And cheap!
The Squid
I got these squid rings for under $3 at Killarney Market. Super cheap!
To get them to thaw quickly I put them in a bowl with some room temperature water.
The Noodles
For the noodles I picked up some prawn flavoured ramen for under a buck.
I cooked up the ramen with half the seasoning and added some peas.
I strained out most of the liquid and added the other half of the seasoning and some sesame oil. Only do this if you have low blood pressure like me!
Back to the Squid
To prep the now-thawed squid I seasoned with salt and pepper, then drizzled with Sriracha.
I added 1 tbsp of cornstarch and stirred until coated.
I fried in a hot cast iron pan coated with canola oil, three minutes per side. Until nice and brown.

So tasty!!! The squid got perfectly crispy without being chewy.
And I can’t help it. I love ramen!
A quick and dirty summertime lunch for those who are busy but want a ton of flavour and texture.
