Lemon Burst Cookies

Lemon Burst Cookies

A lovely woman bought me a foodie gift recently and I wanted to bake her some cookies. I found out her favourite flavour is lemon and got baking!

Lemon Burst Cookies

I thought I had lemon oil but I didn’t.  I just used a lot of lemon zest. Feel free to help the lemon flavour burst by adding some if you have it. They were still delicious without it.

Cream together 1/2 cup room temperature unsalted butter with 1 cup of sugar.

Add 2 room temperature eggs, one at a time, slowly incorporating the eggs into the butter and sugar. 

Vanilla and lemon zest:

Add 3/4 tsp vanilla extract and 1 tsp lemon zest.

Mix together 1 3/4 cup flour, 1 tsp baking powder and 1/4 tsp salt. Slowly incorporate into the batter.

You want the dough to just come together.

I used a pretty large ice cream scoop to scoop out the dough. Not enough to fill it but close. I rolled the cookie into a ball and rolled it around in a bowl containing 1/2 cup icing sugar to coat.

I put the cookies on a parchment-lined baking sheet and baked in a preheated 350F oven for 11 minutes.

I took them out after they puffed up and the bottom of the cookies turned golden brown.

Light, airy, lemony and delicious. I love how they get all crackly! These cookies are super easy to make and just melt in your mouth. Perfect with a big mug of tea to bring a little foodie sunshine into your life.

    Lemon is one of my favourite dessert flavours! Makes such a nice change from chocolate and the usual. These cookies look amazing!

      I love lemon in desserts too Debra! I was thrilled when she said that’s what she likes because Reg pretty much likes chocolate and that’s it. I ate four of these cookies yesterday, OMG, love them!

    Great minds think alike. I just made more lemon cookies tonight. Though mine are vegan. Most of my bakes are vegan but either way, lemon ROCKS!

    It’s one of my most used flavours.

    Tomorrow I’m making lime cookies … and yesterday was chocolate chocolate chip cookies.

    My gosh, they are sure fun. Happy Baking & Boogie Boogie 🙂

      Nice! Great minds indeed. You don’t use eggs in your cookies at all?

      I love lime, it’s one of my favourite flavours in the world. Glad you’re baking up a storm!!
