Mocha Custard with Chocolate Truffle Surprise

Mocha Custard

My version of Everday Food’s Mocha Custards have been featured on their blog! I was even called clever, how cool is that?!

Who does not love mocha? One of my favourite flavour combinations of all time: chocolate and coffee. Yum! When I saw Everyday Food make these Mocha Custards I had to try making them. Although we had a snowstorm here last night (sigh) I know other people are actually getting warm weather and it is hard to find good no-bake desserts so this one is for you!

Mocha Custard

You begin with softening a package of gelatin in 1/4 cup of cold water and let it sit and swell.

You are supposed to bring 1 cup of heavy cream to a boil but I just got it really, really hot. (I was scared the boiling cream would quickly boil over.) Once it is boiling reduce heat to low and add sugar and instant espresso powder. I used Nescafe’s Instant Espresso Powder which smells like my childhood. My mom only drinks Nescafe! Whisk together until the powder dissolves.

One package of chocolate is 4 oz which is what this recipe calls for. On the show she just banged the package of chocolate against the counter and then threw it in. I did that too and it worked like a charm! Whisk the chocolate constantly, making sure it does not burn. When melted remove from heat. Whisk in the gelatin for a minute allowing it to dissolve.

Stir in milk and a pinch of salt. Strain into a measuring cup and divide evenly between cups.

This was my personal touch to the recipe. I had some ganache so I rolled up some truffles and put them in the bottom of the tea cup for an extra chocolate punch!

This dessert seriously took very little time to make. Prep and cooking time was maybe 15 minutes! The long part was letting them set in the fridge for three hours. I do like this dessert but I am pretty sure that I screwed up the gelatin because it was a little grainy. Did not bother my husband one bit, he enjoyed every bite of this mocha treat and I fell in love with mocha all over again.

    Ditto to what Debra said, this sounds so rich and decadent, if you only knew how much I adore Mocha, and then you throw in that truffle, woweee! Heavenly. It says on Martha’s recipe that these are an Italian custard and yet I can’t ever recall having these growing up, oh what I’ve been missing.
