Christmas Eve I made a pot roast in the Instant Pot while fighting off a fever but still managed to come down with a very bad cold. But! I made the best Yorkshire Puddings in the world and they stayed puffy and fabulous and did not deflate. I used Alton’s Brown’s recipe but took mine out at 25 minutes. First time I have ever had true Yorkshire Pudding success. Woot!
Christmas Day I made a crockpot turkey breast but spent the entire day trying not to bruise my throat from trying to cough up my lungs. This morning I have been in and out at clinics and now have giant pills to prevent me from getting pneumonia and two different puffers to help me breathe again.
Still? I am happy! The food was fabulous and we have lots of leftovers so I am going to rest on my couch and heal. This last year really did take everything I have and so I should not be surprised that I have hit rock bottom at the end of 2014.
No worries because 2015 is going to kick ass and so am I! I am hope you had a fantastic Christmas and may we all have a fabulous foodie new year.

Feel better soon, Suzie! Your Yorkshire puds look fabulous! I know how hard they are to make — my Mom could not make them but I had an Auntie who made Yorkshire pudding to DIE for. It was always a treat to go for dinner at her house!

Thanks Debra! I’ve taken two puffers and two monster horse pills and I can finally breathe again. And thank you! I just had to share my fabulous Yorkshire puddings and yes, what a challenge to make. I have tried so many times! Oh that’s wonderful your aunt would share her treasures with you. Nice!

Aaaagh! Blogger ate my comment. We’ve found that leaving the batter to rest for a few hours before cooking the Yorkies makes them turn out better. Yours look wonderful!

Kenora, yes, I did that! I actually blended them while cold, let it sit and then blended again. They turned out great! Thanks for the comment and confirmation that this is a good technique.

Thank you! And yes, love oxygen more than ever. Bored of being on the couch though but if it helps me breathe and recover, I shall do so.
