One of the hardest things to resist in the world is a Subway cookie. It takes all my energy not to pick up this treat when we go out for a quick bite. So dense yet moist and melt-in-your mouth… They take me to foodie nirvana.

After I burned all those chocolate chip cookies the other day I was determined to make a heavenly batch of what was supposed to be similar to the chocolate chip Subway classic. I used this recipe in an attempt to redeem myself and try something new at the same time.

I was going to make the entire recipe as you can see here with the two sticks of unsalted butter and two large eggs coming up to room temperature with a bowl of hot water in my microwave. Yes, I was too lazy to get my proofer out. I let it sit in there while I had a shower and got some things done.

Then I realized I only had just under 1 cup of self-raising flour. I topped it with all purpose and did half the recipe instead but will write it in full for you.

The Recipe

Subway Cookies? Close... Not Quite...

Cream two sticks room temperature butter with 1/2 cup of white sugar and 1 cup of packed down brown sugar.

Mix in 2 tsp vanilla extract.

Add two eggs one at a time, mixing thoroughly in between additions.

Add 2 cups of sifted self-rising flour a little bit at a time, beating mixture together.

Add 1 12 oz package of chocolate chips. Chill dough covered in the fridge for one hour.

Bake on a parchment-lined baking sheet. Scoop a tbsp of dough and roll into a ball. Put 8 balls of dough on the sheet leaving space in between.

Bake in a preheated 350F oven for 12-13 minutes, until golden brown. Allow cookies to cool and then eat!

These are very nice chocolate chip cookies. Are they like Subway’s? No, not at all. Damn it! I will say they brown perfectly and when nuked a little in the oven, they are quite delicious but Lorraine’s (made with shortening) are better and so are Martha’s. These are pretty typical chocolate chip cookies and definitely not fudgy and super moist.

If you know of a recipe that is similar to Subway’s cookies, please let me know. I would love to test them and if they pass, I will make the white chocolate macadamia nut version too! Those are my personal favourite. Yum.

    You are cooking them for too long. The secret is to cook them for 8 minutes and take them out of the oven. They will continue to cook. Let them cool off for 5 minutes then move to a wire rack. Perfect chocolate chip cookies everytime.

    Thanks Conny! Part of the challenge of recipe testing is following the directions although in this case, they were very light when taken out but maybe next time I will try and take them out earlier.

    We recently made the Chewy Chocolate Chip Cookies from the FoodNetwork magazine and they were pretty darn good. Needed a smidge more salt though. I love trying new cookie recipes now and then as well, the kids sure don’t mind being guinea pigs, but ultimately we always go back to our favourite, and that’s Lorraine’s. They’re still tops here 🙂

    Oh interesting Ava, maybe I will try those with a tad bit more salt. Were they like Subway’s? It’s true, Lorraine’s are impossible to beat, LOL.

    I’ve honestly never tried the Subway cookies so I can’t say if they compare. Like Conny Mc commented above, I always slightly underbake my cookies to get that soft goo in the middle and as soon as they’re stable enough I get them off the baking sheet onto the cooling rack. I found with this recipe when some got a little more browned they immediately went crispy when they cooled so if you try them, keep a very close eye. I also used a small scoop, and was able to get a lot more cookies (I think 50 smaller ones) versus what the recipe is supposed to yield (30). Oh yeah, I also used the PC Milk Chocolate Chips…heaven!!

    Ava, I love those chocolate chips too! Excellent advice and I have printed up the recipe. Thank you! And you have never had their cookies? I made the mistake of introducing my mom to them. She is not a fan of baked goods but fell in love with theirs.
