It is summer and probably where you are, getting kind of warm. No-bake gluten-free treats are not easy to find but Chex Muddy Buddies by Rice Chex are fast, economical and easy to make without heating up the oven. I know, they look kind of weird but trust me, these are surprisingly delicious.
I recently got this fantastic gift basket from Chex filled with almost all the ingredients I needed to make their Muddy Buddies so that is where I began.
The original recipe makes a TON of Muddy Buddies so I divided the recipe in half but will share the way they make it here. In a bowl melt together 1/2 cup peanut butter, 1/4 cup butter and 1 cup semisweet chocolate chips in the microwave for 1 minute on high. Stir. Melt for another 30 seconds and stir until smooth. Stir in vanilla.
Pour onto 9 cups of Rice Chex cereal and stir to coat. (They even included this cool giant bowl!)
Pour cereal into a giant Ziploc bag and add 1 1/2 cups of icing sugar. Seal and shake to coat.
Spread over wax paper (I used parchment) to cool. Even with dividing the recipe in half, this makes a ton!
I have to say, I was a little nervous to try this treat. It looks unusual but wow, were these little bites ever crispy! It reminded me of a crunchy version of chocolate peanut butter cups. Yummy! My husband really thought they were going to be either too soft or too hard but said they were just right when it came to texture. We both found this treat highly addictive. I was also happy to find out that they stay quite crispy and delicious over a couple of days.
If you are looking for a summer treat that stretches a buck and helps feed a crowd, I think this is the treat you are looking for. Not super healthy but at least it is gluten-free. I give this easy party treat four and a half out of five wooden spoons.
It could not have been easier to make or tastier to snack on!

OMG these are right up our snack attack alley! I will definitely enlist the kids to make these over the long weekend, perfect picnic food too. Guess who’s getting some Chex cereal today?
