I kind of passed out a few days ago from the Christmas madness and needed a bit of a break and went into recovery mode but really wanted to share this last little Christmas cookie with you. I had always loved cookies with candied cherries in them when I was a kid and always wondered how you made them. This year I went to the Bulk Barn and picked up some red and green candied cherries and tried the Candied Cherry Slices recipe at Bed and Breakfast Recipes at iloveinns.com to share with special friends who came over for a gaming night at our house right before Christmas.
This is a pretty wet dough at first, probably because it uses powdered sugar but it actually make a lot of batter! Which means, it makes a lot of cookies. Perfect for the holidays!
It requires 2 cups of green and red candied cherries cut in half although I think next time I will chop them up a little more. They fell out of the batter a lot.
This is one of those doughs you make into a log and then chill so you could slice them individually and see the cherries shine through like stained glass.
As I said, it makes a lot. I even have some leftover dough in my fridge!
Here is their plate of Christmas treats. As much as I love baking, I think I am done with sweets for a while. With the new year around the corner, perhaps it is time to focus on things like vegetables?!

I am now eating Christmas cookies for breakfast–keep telling myself it is to get rid of them–who am I kidding š

Heh. I had brownies for breakfast. And I’m telling myself it’s because I’m on a pre-New Year extremely limited sweets resolution period: an anything-goes nothing-counts, it’s-still-technically-the-holidays sort of place.
Ahem.

So pretty!
I used to LOVE chocolate covered candied cherries, then I met someone who worked in a plant where they candied them – no more!! Tee hee (one of the saddest bits – when the load of beautiful cherries came in, if some were bruised, the whole lot got thrown out – & the farmer didn’t get paid – that was before the whole bleaching & dying & suggaring process began . . .)
I made scones using chestnut flour after following your inst. for roasting chestnuts – yum!! Just made a second batch (with some craisins . . . )
& the best winter treat – chocolate covered persimmon pips!! MMM – those I could (& did) eat SO many of . . .

Christmas cookies are a special holiday tradition.
All while I was growing up, my grandmother used to make frosted Christmas sugar cookies and mail a box full to us every year. This year, my aunt sent us each a box of the same cookies. Brought back so many memories. I’m thinking now that’s a tradition that should be handed down from generation to generation.

I could cry, my dough isn’t rolling and I was so careful to follow the recipe.
I don’t know what to do. Someone mentioned their butter, sugar, egg and vanilla was very moist, mine wasn’t.
How can I fix it when this is my 1st time doing this recipe. It won’t roll in either wax paper or plastic wrap.
Can someone help meš¤š£
Suzie the Foodie says
Could the dough be too cold? That can cause awful cracking.
Suzie the Foodie says
Oh Lorri, I am so sorry! OK, don’t despair. There are probably 2 things going one here. Maybe your dough is too cold. If it is, it will crack and fall apart. Let it get to room temperature and see if it improves. If not, your flour must be extremely dry. Add a little more beaten egg to the batter and mix again. Like 1 tbsp of beaten egg. This will give it moisture and structure. My foodie fingers are crossed for you!!!

Can you freeze these dough logs before cooking, Suzie?
Thanks,
Debbie

My apologies, I have been dealing with a death in my family. I hope that you managed the recipe OK and that you were successful.
