Super Easy and Fast Christmas Chocolate Fudge

I found out about this recipe from my dearest online friend Bohemian Single Mom. She calls it Candy Cane Fudge and you can find the original recipe here. The original recipe calls for peppermint extract and candy canes but I think I am allergic to peppermint. It always gives me a sore throat so I just went with the chocolate goodness. My husband has been in a blissful chocolate/sugar coma ever since I made these. If you feel the pressure of Christmas/Yule coming and have no time to bake, I really recommend this recipe. It is fast, easy and uses very few ingredients.

Christmas Chocolate Fudge

Over low heat, melt 1 pkg (350 g) milk chocolate chips chocolate and 1 cup (250 mL) semi-sweet chocolate chips with 1 can (300 mL) Regular Eagle Brand sweetened condensed milk and a dash of salt. Remove from heat. Stir in peppermint extract, if using.

Look at all that sugary goo! OK, nobody said fudge is good for you. I was not entirely convinced that this was actually fudge so I looked up the definition. At candy.about.com they write, “Fudge is a cooked chocolate confection.” Well that is what this is so yes, this is fudge!

Over low heat melt altogether. I did start to panic. I am really prone to scorching my chocolate which is what I thought was happening here so I stirred it quite a bit and even though it looks like it was going to end in disaster, it didn’t!

I smoothed it into a parchment-lined square baking tin and while warm I added some Christmas sprinkles. Rich, dense and dangerously sugary, this is one of the best easy Christmas treats to make for those who are new to baking or if you are just running out of time but want to make something homemade for that special somebody.
What is more festive and Christmasy than a big chunk of chocolate?

    Wow. Couldn’t get much easier than THAT, eh?
    I thought I had a quick and easy recipe using marshmallow creme, but this one will get me to the diabetic coma in record time!

    I avoid the recipes with marshmallow fluff, because it contains high fructose corn syrup. So this is fantastic! Also, because it doesn’t have granular sugar, it shouldn’t be grainy. Thank you. I love fudge.

    I haven’t had a chance to do fudge this year. Or very little Christmas baking.
    But One of my client daughter did make fudge and it was quite tasty.

    I made a fudge once, later topped my cakes with it heheheehehe it never did set.

    Since then I’ve been looking for fudge recipes, also got one from Nigella, well since yours is much much hassle free, I’ll go with it. Will make the first batch on Saturday, God willing and then let you know šŸ˜€

    You can also do this fudge in the microwave. Put it all in a glass bowl for app. 2 min. Stir till smooth and pour into parchment lined pan.I have been making this fudge with my kids every christsmas since they were very litle. We all LOVE it!
