Foodie Challenge!

April 13, 2010 by Suzie the Foodie 5 Comments

Quest for the Perfect Mac & Cheese

I have not forgotten our quest to find the super moist and luscious mac and cheese recipe. In fact, I will be making Martha’s Perfect Mac and Cheese this week and I hope you will take on this foodie challenge too. Who doesn’t love mac and cheese?
Several of you left comments on my blog when I made the Barefoot Contessa version to give this one a shot so I am going to. I will follow the recipe closely but have to cut it in half. It serves 12 people which is a crazy amount of food! Yes, I am definitely cutting it in half. I love that we will be using gruyere cheese, one of my favourites. I will post my results on Friday.
Will you join me? I hope so! One night of mac and cheese for dinner with a side salad sounds like a great dinner to me. I am always in need of comfort food these days.

I love the idea of doing this as a challenge! I don’t think I’ve ever made mac and cheese from scratch, believe it or not! We just went to the store yesterday, so I may be delayed a week or so, but I want to try this!! 🙂

No problem Tammy! Any time you want to join and give it a shot, go for it and then let me know how it turned out OK? I don’t make it from scratch very often but I am looking forward to trying this one.

I actually made this a while back already and it was amazing. Did the full recipe too. It reheated really well and I’m inclined to say it was better the next day. It is definitely gooey good. I highly recommend using a really good quality bread for the topping, I used fresh thick sliced white bread from COBS bakery and cut the pieces into tiny crouton cubes, it looked very nice and had a nice crunchiness to it.
This recipe is definitely a keeper, can’t wait to see how it turns out for you Suzie, I hope you love it as much as we did.

Mac’n’Cheese challenge accepted. B/C Lauren is dairy free, we made an alternate recipe (which turned out surprisingly well considering!) It was nice to have a reason to make it even though we’ve already had pasta this week!
