Halloween Boo Berry Cookies

We are edging ever-closer to Halloween! And I wish I could say that my first treat was a success.

Turns out, I have zero ability to make Rice Krispy Squares! I wanted to turn them pumpkin orange and add orange extract to them but they burned, burned, burned.

Thankfully I did not give up! On the same day I took a recipe I found and made it my own and I loved them. I hope you do too!

This recipe is inspired by these sand dollar cookies. I made a 1/4 batch in case they were a disaster but will write out the recipe in full for you.

For the filling, mix 2 cups fresh or frozen blueberries (wild is best because they are small) with 1/2 cup sugar and 1/2 cup flour. Oh and I added a sprinkle of salt.

For the cookies, cream together 1 cup of icing sugar with 4 sticks/1 lb of unsalted butter.

Add 4 cups of flour with a pinch of salt until incorporated and then squeeze in the juice of one lemon until the dough is well combined and not too dry.

Roll out the dough on a well floured surface until it is around 1/8″ thick (or thinner if you can) and cut out with ghost cookie cutters.

Add some of the filing on top and then go around the edge with a pastry brush dipped in egg white.

Cover with another cookie and press together.

I used a toothpick to add eye and mouth holes. I baked in a preheated 350F oven for around 12 minutes. Just until the cookies wese cooked through and a little golden.

I immediately filled the eyes and nose with inverted mini chocolate chips. They melted into place. I liked that look but wanted them to look more ghost-like.

So I sieved some icing sugar on top. Next time I will go the icing sugar first and then add the eyes and nose tip-side-up and attach with some icing.

Wow, these were so delicious! They were crazy soft, light and who knew blueberries and chocolate go so well together? Damn! With a mug of tea, these literally disappeared in your mouth. My little foodie ghosts were ethereal! Better than I could have hoped.

To skip a step, you could probably use blueberry jam as a filling. Regardless, these kicked butt! No chilling of dough required, I made these quite quickly and easily (unlike those stupid Rice Krispy Pumpkins).

    These were inspired by Boo Berry Cereal, which I adored as a kid. Ghosts and food? The perfect combo!
