One of my favourite things in the world to make is bread. When I saw that the first recipe we learned to make in Gordon Ramsay’s Masterclass required brioche I knew it was time to finally take on this baking beast of a bread. Egg-rich and infused with buttery goodness… This is how I spend my weekends.
Please note this recipe makes 1 loaf of brioche, was inspired by Laura Calder‘s recipe, and requires 3 rising times and 2 days to make.
A Word About The Ingredients
You need to begin with blooming 1 1/2 tsp regular yeast in 3 tbsp warm water and 1 tsp sugar. Let sit 5 minutes.
You will need 3 room temperature eggs. I brought mine up to room temperature quickly by immersing them in warm water.
Half of 3/4 cup of butter is 85 grams. You will need softened room temperature butter.
Making The Dough
Yes, you can make this by hand but incorporating the butter into the dough will be a little challenging. As a result, I decided to make it entirely in my mixer.
Combine 2 cup flour with 1 tsp salt in your mixer’s bowl.
Using the dough hook, incorporate 3 room temperature eggs and…
Add the yeast mixture. You want a soft and sticky dough. Mine was dry so I added 1-2 tbsp warm water.
Add 85 grams of soft room temperature butter a little at a time until incorporated.
Knead 10 minutes.
Put in a bowl and let rise in a warm place covered for two hours.
Punch down dough, put back in bowl, cover and refrigerate overnight to double.
Shape bread into a loaf shape and let rise 1 1/2 hours in the pan, covered and in a warm spot.
Glaze with yolk and milk wash.
Baking The Bread
Bake in a preheated 425F oven for 35-40 minutes until dark golden brown.
