Lemon Cake Batter Waffles

I am massively obsessed with Pinterest. I have been for years. I consider it my visual therapy that makes me feel all warm inside. But it also inspires me and gets me obsessing about food ideas. One in particular is making waffles from a cake mix.

Most of the pins I saw used chocolate which I thought would be too sweet. I bought this Lemon No Name Deluxe Cake Mix for $1 and decided to give it a shot over the weekend. I had to know if a cake batter would make delicious waffles!

I wanted to make a full brunch with just a couple of waffles so I divided the cake mix in half.

I followed the instructions on the box and divided the ingredients in half.

Smelled so lemony and looked like the perfect waffle batter!

I heated up my waffle iron, sprayed it with canola oil and put 1/3 cup of batter in each waffle spot.

I closed the waffle iron and clearly, that was too much batter. Next time it will be 1/4 cup per waffle.

I cooked the waffles for 3 minutes exactly. Less time they tend to be too raw and any extra time they get too crunchy for me.

Sadly, Reg was not super impressed. He thought it was silly to have a waffle that tasted like cake and was already uber-sweet that you then slathered with syrup.

Me? I thought they were awesome! Waffles are not easy to make and I loved the lemon flavour. I like that they were cake-y and a special treat to go with our scrambled eggs and turkey bacon. For me, they were pretty darn perfect. 

This Pinterest Pin was a success! Not a failure. It saved time and only cost me 50 cents plus some eggs and oil. I liked it so much I would be tempted to make a drizzle of icing sugar with lemon juice and zest for it the next time. Sadly, Reg would not like that so maybe I will make it one day just for me. 

I give this Pinterest Pin four and a half out of five wooden spoons. FYI: To get a perfect score, Reg would have to have liked it too.

    This intrigues me! I like lemon flavour so I think the lemon/icing sugar drizzle would be much preferable over syrup. Tell Reg he can always eat them plain! There’s no law against that.

      I agree, I think the lemon drizzle would be treated it more like cake too and good point about Reg, he should have skipped the syrup!

    Lemon and lime are my favorite flavours in cakes, cupcakes, cookies, pizzelles and all things wonderful. With a little homemade drizzle … ahhhhhhhhhhh. Life is good.

      Life is good! And these were easy to make and yummy. I’m very picky about lemon but it worked with these waffles.

    Carrot cake batter is really good.. With a cream cheese glaze.. I’m gonna have to try the lemon! Yumm
