I thought I would finish off the week with my final Fathers Day treat, this time for my father-in-law. I woke up on Sunday morning and baked these mini muffins for him again. You can read about the original batch here. They are inspired by Janet and Greta‘s Little Miss Muffin Tops recipe.
This time I remembered to add not just the strawberry cream cheese in the middle but some strawberry jam too! I wanted to use strawberry rhubarb jam but the Superstore has been out forever and I could wait no longer. I pretty much followed the recipe but if you are making mini muffins check them at 10 minutes. This time they were done in 12.
These are tastier and healthier-than-most muffins and still feel like a treat. It makes a nice batch so I had some leftover and my husband took them to work and apparently they disappeared in a flash. Yay!
So concludes my week of making Fathers Day treats! We are actually getting summer-like weather here and there so I may begin making more salads than baked goods. I usually do not like warm weather but after the three winters I have survived here, I say bring it!
