Nutella Fudge with Almonds and Fleur de Sel

I was in the mood for decadence and I seriously doubt if there is anything more decadent than fudge. Oh how dangerously easy everything melts together in a square pan of fabulous goo.

This is my take on a popular recipe floating out there in the cyber world. I worked with what I had and in under ten minutes created this divine foodie treat.

Here are the naughty ingredients: 1 can sweetened condensed milk (cheaper in the ethnic food aisle, shh!), 8 oz of chocolate chips, 3 tbsp softened butter, 1 cup Nutella, 3/4 cup toasted almonds slices, 1/2 tsp salt and 1 tsp vanilla bean paste (you can use extract).

Make sure to grease and line an 8 x 8″ baking tray.

Mix everything together.

It amazes me that this recipe called for so much salt but it ended up being so sweet, it really is necessary.

Put your stainless steel bowl over lightly simmering water on the stove. Do not let water touch bowl. Stir slowly and continuously.

Once everything has melted, work quickly.

Add the nuts, fold them in quickly and scrape into the baking dish.

Sprinkle with special salt, I had fleur de sel so that is what I used. Quickly get into the fridge and let set for a few hours.

Many times that I have made fudge it has some out grainy. Not this time at all because I worked quickly, did not bother with candy thermometers and trusted my judgment. Was I ever rewarded for it.

This fudge is crazy-delicious. The texture? Perfect. The only problem? All that fudge between two people… is dangerous! So I divvied it up and put slabs of fudge in the freezer. That way when I need a treat and do not have time to bake, voila!

You can really taste the Nutella in this treat and if you have hazelnuts, I bet they would rock in this and take it to hazelnut heaven.

This was so good I got a sugar rush for the first time when I cut too-big-a-piece for myself. You are now officially warned: enjoy in small doses.

    Your post had me at the mention of Nutella in the recipe! It without a doubt, every Italian child’s preferred spread. This is one kid that never outgrew it. Still love the stuff and I always have a jar sitting in the pantry.

    Oh that last shot of fudge looks so creamy and decadent. It definitely looks like it’s worth the 1 cup splurge. Just picked up a couple of jars of Nutella on sale, so I’ll be trying this for the fudge fans in the family.
