In order to fix a foodie wrong, I wanted to use the slightly over-baked Gordon Ramsay Focaccia I made and turn it into a panzanella salad. A bread salad?! Those are two of my favourite things! What is there not to like?
I sliced off all the crusts around the perimeter of the focaccia.
Turned them into bite-sized pieces. I first drizzled with balsamic vinegar, a really good aged one. It is more traditional to use red wine vinegar but I wanted to try it this way first. Then I drizzled with the oil. If you do the oil first, you will mask the flavour of the vinegar.
I had these slightly dried out little tomatoes and thought they were a perfect addition to the salad.
I squeezed in the juices of the bread before chopping. I recommend you slice them first. I got tomato juice all over my kitchen.

I chopped up a piece of peeled cucumber. If I had any red onion I would have added it too.
I crushed one large clove of garlic and added it to the salad with some salt and pepper. Then I tossed it altogether.
Love it! I had to add extra balsamic vinegar but wow, so tasty and yummy. The perfect way to redeem myself in my kitchen and have a hearty lunch at the same time.
I don’t know about you but I have been craving tomatoes lately. I think it is their summery flavour calling my name.
