I know that summer is officially over but for me, salads are an all-year foodie treat. I do not think there is a salad I enjoy more than a good Greek salad.
I take the basic ingredients and make many versions over and over but the one thing that brings everything together is the dressing. I think I have finally come up with a version I am happy with.
The Dressing
You will need 1/4 cup olive oil, 1/3 cup red wine vinegar, 3/4 tsp garlic powder, 1/2 tsp onion powder, 1 tsp dried oregano, 3/4 tsp dried basil, 1/2 tsp salt, 1/2 tsp pepper and 1/3 cup feta cheese.
Put together all the ingredients into a small mason jar.
Make sure you leave some feta for the salad too!
Shake together. This makes enough dressing for two large salads.
The Extras
Feel free to add some fresh basil to the salad too. I actually successfully grew this monstrous basil from seed!
In order to make this salad more of a meal I grilled some of these smoked chicken sausages with spinach and asiago cheese.
Putting It Together
So delicious! Filling, flavourful and so easy to make. Reg loved it too and he usually does not like vinegar-based dressings so this gets the green light from both of us.
