President’s Choice Gluten-Free Crackled Chocolate Cookies are made with PC Gluten-Free All-Purpose Flour Blend. The recipe was developed with this “-free” product to help Canadians with food sensitivities. Of course I had to put it through my own test kitchen to see if we would actually like the cookies!
Please note! There is a 2-hour chilling time required for this recipe.
The Recipe
You will need 3 oz chopped extra dark chocolate, 1/4 cup unsalted butter, 1 cup granulated sugar, 2 eggs, 1 tsp vanilla, 1 cup PC Gluten-Free All-Purpose Flour Blend, 1 tsp baking powder, 1/8 tsp salt, 1/2 cup semi-sweet chocolate chips and ¼ cup granulated sugar.
I like to chop the chocolate on a diagonal at the corners with a serrated bread knife.
In a heat-proof bowl, melt chocolate with butter over (not in) saucepan of simmering (not boiling) water. Stir together and set aside to cool.
In large bowl, whisk together 1 cup sugar, the eggs and vanilla.
Whisk together flour, baking powder and salt.
Pour in cooled chocolate mixture…
… and whisk until combined.
Stir into chocolate mixture until combined.
Stir in chocolate chips. Cover bowl with plastic wrap. Refrigerate for two hours or until firm.
Pre-heat oven to 350F. Line two baking sheets with parchment paper.
Scoop dough into 1 tbsp amounts, roll into balls.
Coat in 1/4 cup sugar.
Place 2 inches (5 cm) apart on prepared baking sheets.
One sheet at a time, bake in centre of oven for 12 to 14 minutes.
Foodie Results
Cookies will be cracked on the surface but still slightly soft. Cool on sheets on a rack. Store in airtight container at room temperature.
They came out exactly as described. There was no grittiness commonly associated with gluten-free cookies and they were best still warm out of the oven. Even a few days later, these were quite good. For gluten-free cookies. Reg actually really liked them but I could tell they were gluten-free. For me, they were just OK. For those who are gluten intolerant? These will be a foodie godsend.
I can say they are the best gluten-free cookies I have ever had. For me, they are just a three out of five wooden spoons but for those on a restricted diet? Four and a half.
