Inta Ridler's Caesar Salad Dressing Recipe

There is no dressing I love more than my mom’s Caesar salad dressing. I was shocked to realize I had not yet shared it with you here so I had to remedy that.

Last time I made it I did not like how thick it was from the cheese going through the blender so this time I kept it separate but… Mom was right. It has to be blended together. Silly me for questioning her recipe!

Grate 1 cup of mozzarella and 3/4 cup Parmesan.

I put the cheese in my mom’s Nescafe jar using her Galloping Gourmet bench scraper. This was a mistake! Do not do this.

You need to coddle an egg. To do this I added an egg to salted boiling water and then let sit for 8 minutes. I cooled it off in cold water and then peeled it.

Put the egg into the blender with 1 cup of oil (I used canola, Mom did not like olive oil), 1/3 cup white wine vinegar…

1/2 tsp black pepper, 1 tsp salt, 1/2 tsp dry mustard, the cheeses, 3 cloves of garlic, 1 tbsp fresh lemon juice, 4 shakes of Worcestershire sauce and 1/2 cup of water.

Yup… Mine without the cheese was way too liquidy!

But the flavour was still there. This will give you dragon breath but it is so worth it! I am going to run it through the blender again to make it creamier and bring it altogether.

This is a REAL salad dressing recipe. Bold, flavourful and will knock you off your feat.

      I hope you enjoy it as much as my family does. I put it through the blender yesterday and had it for lunch on a mega salad. Delicious.
