Suzie’s sacreligious version of Tyler’s Shrimp Scampi

Shrimp Scampi

I made myself a huge treat on Friday night, my own version of Tyler’s Ultimate Shrimp Scampi with Linguini. I wanted to do a recipe review of Tyler’s original recipe but I didn’t have wine or linguini so as usual, I improvised.

Instead of the wine, I made my own seafood stock. Many may find a dish with tons of garlic and shallots flavourful enough but I know my insensitive tastebuds were going to want me to up the flavour. My Mom had sent me seafood bouillon cubes and this was the perfect time to use them. I heated up some water on the stove, dissolved some of a bouillon cube in the water with the shells and tails from the shrimp. I learned this from Ina on her episode for Shrimp Bisque on the Barefoot Contessa a while ago and wow, does this ever work! Thank you Ina!

I also did not have linguini so I used Catelli’s Smart Pasta‘s spaghettini instead. I have tried all different kinds of “healthier” pastas and this is the only one I like. If you looked in my cupboards you would believe me because I have a LOT of pastas I just couldn’t bare to eat again and don’t know what to do with. Catelli’s Smart Pasta has three times the fiber as regular pasta, has no fat or sodium, and truly tastes like regular pasta. Finally a healthy pasta worth eating!

I finished off the dish with some parmesan, I couldn’t help it. I know it is considered sacreligious to put parmesan on seafood but this was my dinner and I could do whatever I wanted. I’m all about breaking the rules anyway!

I hope you break some culinary rules too and make something the way you like it because I tell you, the payoff is extraordinary! In some ways I wish I had had all the ingredients for Tyler’s version because I trust his palate, he loves BIG flavours, but I am totally OK with making dinner my way too. All that matters in the end is you love the final results. And boy, did I ever.

    Well, I guess I’m a rebel, too, cuz parmesan and shrimp sure seem to go together in my book! Your dinner looks like it was divine.

    Looks wonderful.
    I’ll look for seafood bouillon cubes to try making the fishsauce. I love it with springrolls and even lettuce rolls.

    I’m chiming in to say I put Parmesan on my shrimp too. If it’s wrong, I don’t care because it tastes so good. I love SHRIMP!(Now I can go on like Bubba from Forest Gump about how many types of Shrimp I like.) Shrimp Scampi is delicious. I have to try the seafood bullion. Your dish looks so good!!

    I am not a fan of sea food… so I can’t really comment on that. But here’s an idea of what to do with all the pasta. Make art with it! Paper, glue, maybe some glitter, you can make some wicked awesome things.
