Bitchin' Kitchen's Home Fries

As the weekend finally approaches (it has been one heck of a week) it is time to think about my favourite meal of the day: brunch! Instead of just throwing some eggs and toast together, why not make a brunch classic with Nadia G.’s recipe for home fries? They are a little time consuming but hey, it is the weekend, what’s the rush?

I used mini roasting potatoes and sliced them 1/4″ thick.

In hot canola oil on medium heat I sauteed the potato slices for 10 minutes. I tried to do this with a smaller pan at first. Nope, doesn’t work. Get out a big saute pan, you want those potatoes to get nice and brown.

Instead of onion I added diced shallots with the garlic, paprika, crushed pepper flakes, salt and pepper to the potatoes. Mix together and fry for another eight minutes. Turn up the heat at the end to make sure everything is nice and crispy. Add some chopped fresh parsley…

What a treat! We loved these home fries last weekend so much I just may make them again this weekend too. They browned up beautifully and were full of flavour. The perfect side dish for weekend brunch. I give this recipe four and a half out of five wooden spoons. 

Thanks goes out to the folks at Bitchin’ Kitchen. They posted my Baileys Irish Cream Chocolate Chip Cookies for St. Paddy’s Day yesterday, so these spud are for you! BTW, I mailed a batch of those cookies to my mom for her birthday and she said it was the best aromatherapy she has ever experienced. She was going to share the cookies but ended up enjoying them all herself, they were just too delicious to share. Which of course, made me very happy.

    these look delish! I went out for brunch yesterday with my girlfriends and had eggs, bacon, and their lyonnaise potatoes at Parc and they were phenominal and now I’m ithcing for next weekend so I can recreate my brunch meal and of course the potatoe part! I may just use your recipe! more to come!!
