Foodie Christmas Holiday 2016

I know for a lot of people Christmas means getting a holiday but I find I am busier than ever! I tried to make my life a little easier by buying some desserts and picked up PC Gluten-Free Mini Brownies which went right into the compost bin. I thought they were regular brownies and these are horrid! So grainy and dry. Blech! Zero spoons… I would rather eat dirt.

The good news is I did find time to make my super fast and easy fudge which truly is super fast and easy. I shared these with my neighbours and brought them to a holiday party. 

Christmas Eve I made my perfect roasted potatoes to go with a roast beef dinner. 

I don’t know how but I found time to make my family’s no-fail Christmas sugar cookies and even iced them! 

For the first time I used the Instant Pot to make a slow cooked pot roast. It worked like a charm and broke that sucker down beautifully! I served it with the potatoes and made Alton Brown’s Yorkshire Pudding. I always forget they take +30 minutes to make and to put the muffin tin on a baking sheet. Been cleaning up that oven floor ever since!

Doh! I had one slice too few for the family Christmas casserole but it still worked out. 

I also bought Corn Flakes instead of Special K by accident! It was all good! Our friends Mike and Jen were visiting and got to have brunch with us. They really enjoyed it too. 

For Christmas I made a mayo slathered skinless, boneless turkey breast which works amazingly well for a super tender and juicy dinner. 

For the Kung Fu Christmas party I made Latvian bacon buns which were a huge hit. I used my dumpling press which did a great job closing up the buns but I stuffed so much bacon into them that I could only make half a batch! It was enough for the party though so that is good.

Been trying to get a little rest and entertainment since all the crazy cooking and baking. Need to refill the foodie well of inspiration since exhaustion has kicked in.

      Yup, it was that bad! Blech. Reg bit into one and said, “What did you do to my brownies???!!!” because I thought they were regular ones. Awful!

    Wow, Suzie, what a holiday feast!! There’s so much goodness in there. You know, they changed the shape of Special K and your Cornflakes look even better. I can’t believe you managed to do the bacon buns too – amazing!! Everything looks delicious.

      They changed the shape of Special K Jamie? Wow, maybe Cornflakes were an improvement! I did half a batch of the bacon buns and am going to use the rest of the dough for pizza tonight, LOL. Thank you so much for swinging by and checking out the holiday goodies!
