I love my Instant Pot pressure cooker. I just keep finding more and more ways I can use it to make my life easier.
Like rehydrating shiitake mushrooms AND making a mushroom broth at the same time!
Watch my +1 minute video to see how easy they are to make! Just put the mushrooms into the pressure cooker, add enough water to cover them and put them on for 15 minutes.
Make sure to strain the leftover liquid and use it for a broth. Shiitake mushroom broth is one of the strongest healing potions on the planet so do not throw it away!
Once the mushrooms have cooled down, remove the stems and discard. They have served their purpose!
Slice up the mushrooms, sauté and add to your favourite dish. I also slice them and keep them in the freezer for when my spicy noodle craving hits me. Wonderful for throwing into soups too!

Yes Josie! It is wonderful for miso soup. Add some kombu seaweed and make dashi with it. Or make a clear mushroom soup with it. Add oyster mushrooms, enoki… It is a healing elixir.
