I had a friend coming over for dinner and wanted to make a special appetizer. I had some puff pastry ready to go in my fridge so I came up with this delicious savoury treat that everybody loved. Earthy but sweet, crunchy but a little gooey from the cheeses… Delicious!
The Steps
You will need 2 small onions, caramelized. Method? Your choice. I highly recommend making them in the crockpot if you can plan ahead or make them fast and easy in your cast iron pan.
Finely chop 2 cups of white button mushrooms and cook until slightly brown. Season well with salt and pepper.
Combine onions and mushrooms with 1/3 cup goat cheese and 2 tbsp freshly chopped chives.
Mix together while warm. Let cool and chill filling in the fridge.
Putting It Together
Roll out store-bought puff pastry (I made it once and promised myself I would never make it again) so it is quite long. Slather with the filling leaving 1/2″ margin.
Roll into a long cylinder, trim off ends and brush surface with egg wash.
Cut into 3/4″ pieces and put on a parchment-lined baking tray.
Sprinkled with some shredded cheddar and bake in a preheated 375F oven for 30 minutes or until golden brown.
Be careful to watch them because they can scorch quite easily! Put on a cooling tray but serve warm.

In fact my friend Pepper gave them five out of five wooden spoons! How exciting to have my own food reviewed like that and knock it out of the foodie park at the same time.
