Maritime Brown Bread

I have been looking for a hearty and delicious whole wheat breadmaker bread recipe and finally found one I like! It comes from the out-of-print book: Canada’s Best Bread Machine Baking Recipes. Such a shame because I get the best breadmaker recipes from this book. Above you can see how great this bread is as French Toast.

Here is it with my Strawberry Rhubarb Breadmaker Jam on it. For someone who does not like whole wheat very much, I am very impressed with this recipe.

Maritime Brown Bread

MARITIME BROWN BREAD
This recipe is for a 2 lb/1 kg loaf of bread

1 1/2 cups of lukewarm water
1/4 cup skim milk powder
1 1/2 tsp salt
1/4 cup packed brown sugar
2 tbsp molasses
2 tbsp shortening (or softened butter which is what I used)
1 1/2 cups whole wheat flour
1 1/2 cups all purpose or bread flour
1 1/4 tsp breadmaker yeast

Add ingredients to breadmaker loaf pan in the order listed above. Select Whole Wheat Cycle. I also select a light cycle, I do not like my bread very dark. As usual, I had to add extra water to make the dough come together so pay attention when it starts to churn, does it look dry? Add a little warm water until the dough looks wet. Better too wet than too dry!

Now we can not eat a whole loaf in just a few days so I divide the bread into sections and freeze it. This bread freezes perfectly.

I usually use the thawed bread for French Toast and it soaks up the batter fabulously. Now I can feel a little less guilty about indulging in brunch on the weekends.

Once again, my breadmaker to the rescue! On days I am in too much pain to bake something from scratch with my own hands, I can still get that homemade flavour with zero chemicals or preservatives thanks to my breadmaker.

    It really is hard to find a good brown bread that’s tasty enough. My kids love it, hubby not so much. Yours looks fantastic, it looks like a moist and hearty recipe, good idea to freeze it sections too.

    Oh my! Thank you so much for this grat lookiing recipe. I have to buy some molasses and will make it on the weekend. I usually let the machine do the work and bake it in the, but I am trying it your way; thank you.

    Oh, I love good old fashion hardy breakfasts. Homemade bread is excellent and I wish I’d make more.
    I cant imagine how good homemade bread would be as french toast even frozen before as well. Yum bacon and french toast, who doesn’t like breakfast and brunch foods šŸ˜›

    I just had to come back and tell you I have that book; let me know if you have other good recipes. I made p 20-30, very good. I always have a sticky note on my books & write down what I want to try and yours was on top of the list.

    Ha! I make this bread all the time! My recipe came from a canadian breadmaker cookbook, I forget the name, but since I burnt out the motor 3 years ago on the breadmaker I make all our bread using my kitchenaid and hands. My recipe calls for a crushed up shredded wheat biscut also. Oh, and I always throw in some flax meal. Excellent!

    I’ve always had problems with the paddles getting stuck in the bread. I got rid of my last breadmaker because of this and I’m loathe to get another. Do you have any problems with this?

    Amelia, that did happen to me but now I spray non-stick spray on the paddle and the thing that holds it in place. That has helped with sticking in general.

      Did you make it in the bread maker Shawn? Perhaps your yeast is not fresh enough? Dough falling can also be the result of not enough kneading, did you put it on the whole wheat/grains cycle?

    I made this bread in my bread machine and the loaf was light tasty with good texture – will be making again and again- i agree- it is excellent with honey!!! Yummy!!
