I was so excited to hear that Greta Podleski is coming out with her own cookbook in early October! It is called Yum & Yummer: Ridiculously Tasty Recipes That’ll Blow Your Mind, But Not Your Diet! I was so excited I pulled out my Looneyspoons Collection the first day it cooled down here in Vancouver and made their “Poppy Love” lemon and poppy seed bread.
I added my own special touch so it is super lemony and moist. If you are looking for a simple, easy but kind of healthy lemon poppy seed loaf recipe, this is “the one” to make.
The Ingredients
You will need 1 1/4 cup all-purpose flour, 3/4 cup sugar, 1/2 cup oat bran, 1 tbsp poppy seeds, 2 tsp baking powder, 1/2 tsp salt, 1 cup 2% milk, 1/4 cup melted butter, 1 egg, 2 tbsp + 2 tbsp freshly squeezed lemon juice, 2 tsp + 2 tsp grated lemon zest and 1/4 cup icing sugar.
Directions
Preheat oven to 350F. Spray (I greased with butter) loaf pan with cooking spray.
In a large bowl mix together flour, sugar, oat bran, poppy seeds, baking powder and salt.
In a medium bowl whisk together milk, butter, egg, 2 tbsp lemon juice and 2 tsp lemon zest.
Add wet ingredients to dry and stir until just mixed.
Spread batter over prepared loaf pan. Bake for 40 to 45 minutes until loaf is golden brown and toothpick comes out clean.
Cool pan on wire rack for 10 minutes. Remove from pan and cool completely on rack.
Foodie Results
This loaf was pretty good as-is.
It did not rise very high though and I found that it needed a little more sweetness and lemon sooooooo…
Making The Glaze
Whisk together 2 tbsp lemon juice, 2 tsp grated lemon zest and 1/4 cup icing sugar.
Or however much you need to make a thick paste.
Sharing With Others
Drizzle over loaf and people will go weak in the knees, I promise! I brought this to the art studio and students’ eyeballs rolled to the back of their heads they liked it so much.
