Tutorial: How to make homemade muffins

Strawberry & Lime Margarita Muffins

On this Earth Day in Nova Scotia it’s dark, wet and dreary. The perfect day to make a cup of tea and indulge in a beautiful strawberry margarita muffin. My own invention. Yup, this strawberry-inspired recipe is going in the cookbook too. I think I’m onto to something here!

There are a couple of general rules to making muffins. First, put together your dry ingredients in one bowl, the wet ingredients in another and then measure out your filling. Add the wet ingredients to the dry ingredients and stir together, making sure not to overmix! That is the great rule of muffin making. This isn’t a cookie dough where you cream it altogether until it’s perfect. In fact you want it very lumpy and then just fold in your filling, in this case it’s chopped strawberries:

To minimize additional fat (muffins are notoriously fattening) I used paper cupcake liners instead of greasing the muffin tins. I also used an ice cream scoop to cleanly fill the cups with batter but you can use a measuring cup or a small ladle. Bake them until you can put a toothpick in the biggest muffin and it comes out clean.

Muffins are really easy to make and do not require special equipment or ingredients other than some kind of fruit or sweet filling. The recipe I was working with called for blueberries but I just used strawberries because that is what I had and wow, they were so good!

Funny, after writing this post our power went off because of the torrential rain and crazy winds so I will be spending this earth day at home. I hope the weather is better wherever you are and you can actually be outside on this important day.

    Your muffins look delicious. It was a wet day here too. The sun came out briefly but the rain overtook the day.

    These do sound good! We had sun in the AM, then cloudy later – no rain predicted till tomorrow!
    & remember – ‘good fat’ is actually good for us (& helps fill us up, so we don’t crave as much sugar!)- try coconut oil in baking! (popular 100 years ago, then in the 70s-80s the ‘unsaturated fat’ fad took over – & health went downhill!)
