For me there is no better comfort food than pasta and one of my favourite sauces is pesto. The idea of just grinding up some nuts, flavourings and cheese and tossing pasta in it and coming up with something fabulous is just irresistible.
Which is why I had to try this particular combo because I was hungry and had to work with what I had in my kitchen. Thankfully, it was delicious.
The Recipe
You will need 3/4 cup roasted almonds, 1/3 cup chopped sun dried tomatoes, 1 tbsp of the oil from the jar of sun dried tomatoes…
1 tbsp of goat cheese and 1 small head of roasted garlic.
Whiz together in a food processor and add more oil if you need to for it to turn into a paste.
To add an additional protein I grilled up a Schneiders Chicken Smoked Sausage Mild Italian. They make amazing chicken sausages, love them!
Cook up your pasta. I am a kid at heart so I made some with Catelli Smart Pasta. Why? Tastes just like white pasta but has tons of fibre and I can not tell.
Fold the pesto into the pasta.
I plated the pasta, sliced up the sausage and put it on top and for some acidic kick added a balsamic glaze. Now if you do not have that, add a little balsamic vinegar to the pesto when you are putting it through the food processor. You really need that bite to bring everything together.
Check for seasoning. Mine require a little salt since I only used 1 tbsp of goat cheese.

Man I love food. I love playing with food and getting to eat it too! I think next time I might add a little raw garlic too for additional punch but the roasted garlic was smooth, creamy and delicious too.
