I have been wanting to make Hobo Muffins FOREVER! I have been talking about it on Facebook non-stop but sometimes life gets in the way of baking. I hate it when that happens. But it finally happened!
The inspiration and revelation came from 100 Desserts for $5 or Less by Angel Shannon. I love that these used to be made in coffee cans!
I ended up making these my own by changing the recipe a tad. Hope Angel Shannon forgives me!
The Recipe
Combine 1/2 cup oil (I used Canola), 2 eggs and 1 cup of sugar.
I know these are supposed to be budget-friendly muffins but I highly recommend adding 1 tsp of vanilla extract at this point.
In a separate bowl combine 1 2/3 cup flour, 2 tsp baking soda and 1 tsp salt.
Instead of using raisins I added 1 1/2 cups of chocolate chips to the dry ingredients.
Add the wet to the dry and also add 1/4 cup of water and stir until the batter just comes together. Do not over mix! You want it to be lumpy.
Divvy the dough into well-greased muffin tins until just below the rim. I used my silicone muffin cups.
Bake in a preheated 350F oven for 20 minutes.
This recipe makes around 10 muffins.
Foodie Results
Adding the chocolate chips to the dry ingredients helps them go throughout the batter and as you can see, that works!
These are charming muffins that tasted great. Reg also really liked them which rocks. Again, I highly recommend adding vanilla, it just is not the same without it. I know I cheated when it comes to keeping them super-cheap by using chocolate but it was totally worth it!
