Just a few weeks ago when it was still harvest season at the market I discovered heirloom tomatoes at Kin’s and brought one home with me. I wanted to make a beautiful salad with a luscious blue cheese dressing, which I then used as a fabulous dip for my Buffalo Chicken Bites.
The Recipe
You will need 1/2 cup sour cream, 1/4 cup mayonnaise, 1 tsp red wine vinegar, 1 tsp lemon juice…
1 clove crushed garlic, 1/4 cup crumbled blue cheese…
Pinch of salt and 1/4 tsp black pepper.
I whisked together the dressing and if it is too thick, you can thin with either olive oil or a bit of water.
The wonderful thing about heirloom tomatoes is they really taste like tomatoes! Oh how I miss those flavours of fall already but feel free to make this with regular tomatoes or cherry tomatoes.
This is quite a strong-flavoured salad dressing so go light if you want but I love a lot of dressing, even when it is strong.
The Dip
I had a lot of dressing leftover so I used what I had as a dip for my buffalo chicken bites.
Cook some chicken and toss in bowl with some Buffalo chicken sauce, ketchup and butter. With this dressing? Unbelievable!!!
