None of those are new formats. They are the standard home baking repertoire, and the pistachio and knafeh profile has been absorbed into all of them. That is what durability looks like from the inside.

Compare it with the original novelty framing. The whole bar format is where the attention was, and it is the part that has aged fastest.

The Crossover That Matters Most

One row stands out. Matcha grew 70.73% within this space, and it is still moving month to month.

Two viral flavours merging is a strong signal, because it means both have moved past the stage where they need to carry a dish alone. A matcha and pistachio combination assumes the audience already knows both, which only happens once both are properly established.

Watch for that pattern generally. When two trend flavours start appearing together at scale, both are maturing, and the combination usually outlives either on its own.

What Is Fading

Nutella sits at a declining lifecycle stage inside this category, growing 6.04%.

That is a precise piece of information. The chocolate hazelnut spread was the obvious reference point when the trend began, since it was the nearest familiar thing. As the audience learned what pistachio cream actually tastes like, the reference stopped being needed. Strawberry reads as mature too.

Both were scaffolding. Once people understand the new flavour, the comparison to the old one gets dropped.

Where the Supply Already Sits

For anyone baking to sell, menu presence matters as much as growth.

Cookies, coffee drinks, chocolate cookies and ice cream all carry heavy presence in this space. Those are saturated. Entering there means competing with everyone who moved first.

Now the other end. Peanut butter applications grew 40.06% with almost nothing on menus. Cupcakes and nut butters sit in the same position, growing steadily with the shelf still empty.

Same flavour, wildly different competitive positions, and the difference is invisible if you look only at what is growing.

The Pattern to Carry Into Next Year

Three things repeat across viral foods that last.

They stop being the dish and become the flavour, showing up inside brownies, lattes and cookies as a component.

They shed their reference points. The familiar thing used to explain them early on starts declining once the audience knows the real thing.

They merge with another established flavour, which is usually the signal that both have settled into the repertoire.

When you next see a bake take over your feed, those are the three markers worth watching. They tell you within a few months whether to bother learning the recipe properly.
