The Gourmet Club has officially launched! Bring on fabulously decadent food. Since the weekend is almost upon us, why not try and make baked eggs in cream this weekend? I made mine with cream cheese and lox but you can make them with whatever flavours you want.

This technique comes to you from my copy of La Varenne Pratique which my mom mailed to me many years ago.

The Recipe

The Gourmet Club: Eggs En Cocotte

Butter a small ramekin and add a little whipping cream on the bottom.

Top with your little foodie extras (bacon, cheese, chives…) and then carefully add your egg. Top with a little more cream.

Put ramekins in a water bath in a container that can be put on the stove and the oven.

On the stove, bring to a boil and then put in a 375F oven for 7-10 minutes, depending on how “done” you want your eggs. I kept mine in the oven for around 10 minutes.

Toast, butter and slice some bread to use as a dipper and you are done!

Absolutely deliciously divine!!! I had never had this before and damn, it’s GOOD!!!
